First morning
The region where I live is famous for "Risotto"
So we are going to start the first evening cooking a few
Of the most tasty "Risottos"
“Amarone Rice”

“Risotto with prosciutto di Parma”
*
“Risotto al tastasale”
*
“Risotto with radicchio and speck”
*
“Risotto with zucchine”
*
* Amarone is a typical local red wine from Valpolicella
vineyards, it's made just with dried grapes.
The fragrance released while you are cooking it,
Is something that you absolutely must experience!
*Parma is the city where "Prosciutto Crudo" is made.
It is one of the most heavenly prosciuttos that you will ever taste!
*Tastasale is another local recipe, it's made with minced pork, garlic, rosmery, black pepper and salt... very tasty!
*Speck comes from the Tyrol region.It is a kind of prosciutto crudo but smoked and much more tasty!
*Discover how to make a wonderful risotto
with simple vegetables like "zucchine". Once the risotto is ready the zucchine will be completely melted and the risotto will be creamy.
The evening will end with a dinner feast. (The risotto you have made, plus a typical dessert).
Second morning
I have never gone a single day without pasta!
Preparing pasta in Italy is a nice way to spend time with your friends, chatting and having fun!
Dinner in Italy can start at 8 pm. and go on until 2 or 3 am!
I will teach you how to make pasta sauces in just ten minutes and how to make Hand-made pasta dough!
Together we will prepare:
“Maccheroni with “Puttanesca”sauce”
“Trenette with Genoese basil pesto”
“Pasta e fagioli”
“Lasagne alla bolognese”
“Spaghetti alla carbonara”
“Penne all’arrabbiata”
After class we will savor our home made pasta dishes plus a
typical dessert.
Third morning
When you think about Italian food, the first
thing that comes to your mind is "Pizza" we will teach you how
to make Italian bread, Pizza and Quiches.
You will help me to knead flour and eggs to make pizza dough
or to make a delicious "Focaccia" to eat with our local "salamis
and cheeses" I will show you how to make:
“Focaccia Pugliese”
“Pizza casalinga ai peperoni”
“Pissaladiere”
“Torta Pasqualina”
“Home made bread”
Fourth morning
We will end with my favourite night!!!
I will teach you to make the most tasty Cakes, Mousses and Semifreddos (soft italian Icecream) you will create
“Tirami su” *
“Ricotta and amaretti cake” *
“Torta della nonna” *
“Hazelnut semifreddo” *
* You can’t say “I have been to Italy”
if you haven’t tasted authentic “Tirami su”. Find out
just, how soft this cake made with “mascarpone”
(a very sweet cheese), and Italian coffe is. You will never
forget it!
* Many cakes in Italy have Cheese as the main
ingredient, “Ricotta and amaretti cake “is one of
these recipes.
The filling is something unbeliveble. The ricotta cheese mixed
with “Amaretti “ cookies gives the cake it’s
special flavour.
* “Torta della nonna” means “Grandma’s
custard pie.”
Even in this cake, the secret is inside it. A very soft lemon
cream, fills the pie and even if it’s a simple cake, you
can find it at the best italian restaurants.
* Semifreddo is like an Italian icecream that you put
in the freezer. You can make any shape of it. It could be dome
shape (like in the picture) or a plum cake shape. In this case
you can cut it in slices.
Hazelnut semifreddo tastes like hazelnut icecream but softer
and more tasty!
Special salad and Italian sandwices, will delight you during the cake lesson.
